After establishing himself as a chef at New York City's Il Buco following a too-short stint at Isa in Williamsburg, Brooklyn, last year, Ignacio Mattos co-founded Estela, a cozy spot on Houston Street in Nolita, where he serves up considered yet unfussy American- and Euro-inspired dishes alongside a smart wine and cocktail menu devised by co-owner Thomas Carter (of Blue Hill and Stone Barns).
