How To Make An Entirely Vegan Thanksgiving Dinner
Pardon the turkey this holiday season
Recently, at a food event, a meat-eating chef told me that she often likes to "trick" carnivores into eating entirely vegan meals by not revealing to them what they're having in advance. Not to get them to stop eating meat or dairy, but to educate them on how delicious and filling meals made from seasonal produce can be. As someone who loves rich food but suffers from a sensitive stomach that can't handle anything too rich, holiday meals like Thanksgiving are literally a blessing and a curse. So after I heard about these indulgent vegan meals, it got me wondering, Can one create an entirely plant-based Thanksgiving meal that a non-vegan family could enjoy? I went back to the source.
"Whenever I throw a dinner party, whether a dinner with a few friends or a big holiday party, I like to make sure I am accommodating everyone’s dietary needs. I try to make dishes that are vegetarian or vegan-friendly that I know my fellow meat-eaters will also still enjoy," Nini Nguyen, culinary director of Cook Space who I tapped for ideas to create the perfect vegan Thanksgiving menu, tells me. "The word 'vegan' is incorrectly associated with dissatisfying, but there are many ways to make vegetables hearty and delicious!"
One-third of the culinary school and event space that opened a few months ago in Brooklyn, New York, Nguyen (an alum of the prestigious Eleven Madison Park), along with founder Michelle Mannix and creative director Lara Southern, founded Cook Space to create an approachable environment where it is less about "school" and exact measurements, and more about building culinary confidence and encourage experimentation in the kitchen.
Cook Space classes, ranging from "Everybody Loves Ramen" to "Ayurvedic Cooking," are entirely hands-on, with minimal instructor supervision and plenty of room for errors. I may have slightly burned a wing (from a chicken I personally butchered!) in an "Everything Apples" class, but, as Nguyen made me see, it was actually great, because now I had a piece to later try for seasoning (it was delicious); another couple overcooked their stuffed apples, which then proceeded to fall apart, prompting Nguyen and Mannix to show us how to fix them up should a "disaster" like that happen at home before a dinner party.
For a Thanksgiving dinner, Nguyen says it's easy to replace the whole turkey-mashed potatoes-pumpkin pie trope with vegan alternatives. "Overall, this meal is completely satisfying—and that's coming from a meat eater!—but not overbearing or heavy as some traditional Thanksgiving menus can be," she says.
